About Sushi Tora

Unlike most restaurants, we use real wasabi root. Our wasabi comes from Oregon, where it is produced by a labor intensive process over 3 to 4 years for each root. Wasabi is very difficult to grow and needs a constant supply of fresh water.

 


Sushi Tora uses only the highest quality, freshest ingredients available, including organic vegetables, green, and herbs from small local farms and fish flown in from Tsukiji market in Japan.

All of our sauces are homemade, including our low sodium soy sauce, and we use only organic brown rice oil for our tempura and other fried dishes.



Our teriyaki sauce is also homemade with onions, carrot, celery, orange, soy sauce, mirin, sake, and sugar.

We get fresh fish flown in daily including fish from Tsukiji Market in Tokyo every Wednesday.

For our sushi we use the highest quality rice mixed with organic red and white vinegar.


In some sushi and other dishes we use organic vegetables and herbs from local specialty farms including Oxford Gardens in Niwot. (see picture of greenhouse with owners Peter and Liz)

Our soy sauce is homemade using sake, mirin, soy, dried seaweed and dried Bonito.

Or eel sauce is also homemade with a 5 hour process from soy, sake, mirin, sugar, and fishbones.
